I have no idea how to intro this so I'll just get straight to the point. Fletching tables currently do nothing but give a job to villagers. Fletchers deal with arrows so, it would make sense that is what the fletching table is used for. My idea, instead of the usual, easier, lamer idea, to create tipped-arrows, that can be copied over from Bedrock. But instead another idea I did not create but will do better, the fletcher's table can change the shaft and head of an arrow with different materials.
Head materials:
Iron: Does not gain much distance but deals much more damage
Gold: Just like real life, light but weak
Copper: Acts as a normal arrow until it's a thunder storm where it can direct lighting to where the arrow hits
Flint: Normal arrow
Amethyst: Shrapnel that deals a tenth of a normal arrow
Resin: Deals half damage but applies slowness
Rocket: Works like the crossbow
TNT: If the bow is enchanted with flame it explodes
Shulker Shell: Gives levitating effect
Shaft Materials:
Stick: Normal
Bamboo: Super light, travels far, but lacks in damage
Blaze Rod: Acts as built in flame and works with TNT heads
Breeze Rod: Does not deal damage but is insanely fast and works as a wind charge.
End Rod: Randomly teleports what it hits
Pointed Dripstone: Double damage but really heavy
