Horses, Donkeys, and Mule leveling

I think it would be cool if Equidae animals started out slow, couldn’t jump very well, and started with lower health, but gained levels as you ride them, and got better stats. This would give a stronger player connection to them, and make it affect you more when they die.

    The more unique and personalized the mobs can be made the better.
