Annual events under the Full Moons.
They can be tracked once you know the pattern but it should be very rare and uncommon.
And there would be a gamerule to allow player to skip it by just sleeping through it or completely disable them.
also a command to cause them just like thunder storms.
Blood Moon, or Crimson Moon:
increased hostile mob spawns and hostile mobs do more damage, more undead spawn specifically.
Maybe more unique mobs like Undead Giants or phantoms spawn even if you slept.
Spiders are more likely to have effects and spawn spider jockeys.
when storming on a blood moon lightning should have a higher chance to strike.
Blue Moon, Lucky Moon, or Exp Moon:
All Mobs drop more experience, and more experience drops from fishing, farming, luckier trading, higher enchantability, etc.
A higher chance the player can land Critical Hits.
More Slimes spawn bigger.
Fireflie bushes could enable the particles to come out higher into the night sky.
Monster spawner cages spawn more mobs but less spawn in the wild specifically creepers.
When it's storming lightning should have a higher chance to charge creepers that do spawn.
Orange Moon, or Harvest Moon:
All Mobs drop more items, ores and crops yield more items, trees drop apples more etc.
just higher random drop chances.
Slimes split into the most they can ever time.
Solar or lunar Eclipse:
During the day the moon covers the sun allowing night mobs to spawn, mostly spider
Undead mobs spawn but start burning during the event
