More variants of prismarine. A few examples could be polished, chiseled, or cut prismarine and dark prismarine. Polished prismarine would be similar to polished granite, andesite, and diorite, with a sort of tile-esque look, while chiseled prismarine could have carvings of a Guardian and chiseled dark prismarine could have a trident carving or some sort of spiral design. Cut prismarine would be a lot like cut sandstone, just colored with the normal and dark prismarine blocks. All of these blocks would have variants for both normal and dark prismarine, and the addition of these blocks would add a lot more variety to a block with a lot of untapped potential. An example of this is Minecraft: Story Mode Season Two, where the sea temple in episode one really demonstrates how much more creative players could get with the blocks, leading to much more extravagant builds with an otherwise underutilized blocks. The mere 3 variants of prismarine we have now are incredibly limiting, and I believe that even just these few new additions would open up a whole new world of possibilities for builders.
