With relatively rare ingredients, low hunger, and low saturation, desserts have never been worth crafting. Sugary foods don't provide long lasting energy, they give a quick burst of energy followed by a crash; why not put that in Minecraft?
Desserts (Cookies, Cake, and Pumpkin Pie) could have a mechanic replacing saturation where when they're eaten, they give a "sugar rush", where the player's hunger bar can't be lowered for a set amount of time, followed by a "sugar crash", where the player loses all their saturation.
Let's say that cake gives a 5 second sugar rush per slice, cookies give 10 seconds, and pumpkin pie gives 20 seconds.
A sugar rush would be useful for short activities that require high energy use, like regeneration and sprint jumping over a set distance, but inferior in terms of staying full overall.
The player cannot get a sugar rush while they have the hunger effect, having hunger or eating a food with saturation would cancel the sugar rush, and eating a dessert during a sugar rush would set the time to the new food's time.
