I suggest adding the Skeletal Jaw, a hostile mob with a crocodilian appearance but a fully skeletal body, inhabiting the pools of the new Sulfur Caves. It is not a static fossil, but a living skeleton that waits sleeping at the bottom of sulfur waters. Its spawn rate would be balanced, appearing on average in one out of every two sulfur pools.
The main mechanic is an ambush: if a player passes over it, the Skeletal Jaw wakes up and traps the player in its jaw, dealing initial damage. After snapping shut, the mob gives the player a brief window to escape before striking again. The challenge lies in fighting the Nausea effect from the sulfur water while trying to get away, as the mob will pursue the player after the initial bite. Upon defeat, it drops Bones.
Justification:
Cave waters currently offer no real threat. The Skeletal Jaw introduces a "living trap" mechanic that fits perfectly with the hostile environment of the sulfur caves. It forces players to watch their step, making exploration more strategic and rewarding.
