I suggest adding the Luminous Shrimp, a peaceful mob that inhabits the waters of the new Sulfur Caves. In the real world, several shrimp species are known to survive and thrive in extreme sulfur-rich environments, and this would be Minecraft's take on that phenomenon. They are small, translucent, and emit a pale blue-yellow glow.
The Luminous Shrimp acts as a "bait mob": its bioluminescence draws the player’s curiosity toward the water, leading them to step into the sulfur pools and suffer environmental hazards. They can be collected with a bucket for decorative aquariums. When killed, they drop their meat; if eaten raw, it applies the Nausea effect due to sulfur toxicity, but it remains a viable survival resource for cave explorers.
Justification:
Adding a mob based on real-life sulfur-dwelling biology gives the new biome a sense of authenticity. Beyond beautifying cave waters with their translucent glow, they create an interesting risk-and-reward interaction, serving as both a decorative feature and an emergency food source.
