In the update teased in minecraft live, using sulfur water as an ingredient to brewing would provide more reasons to return and seek out multiple caves. Once water is depleted, adding more water to the pools would take some time for the sulfur to leech back into the water.
Perhaps stronger variants of potions, longer duration than redstone, or a nausea effect potion. Or some other ideas that anyone reading this might come up with in addition.
