Hoodwinking would be the act of scamming a Piglin or a Villager out of a trade. When trading with Piglins, you use gold. So, if you were to take a copper ingot and yellow dye in a crafting table, it would make "Fool's Gold" or "Scam Gold". There would be a 25% chance that the Piglin realizes the gold is fake, and refuses to trade. If that succeeds, there is 7% chance that the Piglin will realize it was fake gold after the trade, and rallies the other Piglins to help it get revenge. It would be the same for a Villager. You dye coal green, and there is a 17.5% chance of them accepting it, seeing as though the coal texture and emerald texture are more different than the two ingot textures, which are identical except for color. Then, there is still 7% chance that they will summon the Iron Golem to attack you after the trade has been made.
