Imagine this: You're in your Minecraft world. You've unlocked every achievement and have seen all there is to see. Nothing interests you anymore, but you just downloaded the new update and figured this might interest you. You're smelting iron when your screen starts shaking, just a little bit. Confused, you walk out a bit to find out what happened and you find a volcano, spewing lava. You run to your home in panic, and get back to smelting your iron to comfort yourself. You come back later to see the volcano filled to the top with cobblestone, and it clicks to you that the lava has dried up.
An evolving terrain update would add a spice to the game that will keep players on their toes, and will keep the game interesting. Evolving terrain could range from a mountain turning into a volcano and erupting for a minute, to caves collapsing, to trees falling over, and everything in between. Evolving terrain would keep the Minecraft world evolving, and could give players some more things to look for when they're bored. Admittedly, there are flaws and downsides that some players won't like, but it's impossible to please everyone, and it would certainly be a good experience for players who are bored with their world. This could even just be a setting, like Caves and Cliffs. Considering how ambitious it is, it would definitely need optimization, but it would be worth it in the end for such an interesting result.
