Crops like potatoes and carrots drop more produce than wheat, which only drops one when harvested. While I get why that is, I would like to suggest that they give wheat an update (as well as other crops). We have the normal fully grown stage, BUT what if wheat came in an additional stage. You could still harvest at the current max size and that would provide one or two wheat along with (0-2 seeds), BUT you could also wait a little longer and have taller wheat (the same height as tall grass) as its overgrown variant. This would be as tall as the players torso (perhaps even a little taller) and would provide 2-3 wheat and 2-4 seeds with every harvest.
What's the purpose of making wheat taller? Well it provides a new look to wheat, makes wheat a more useful crop to grow, and provided a point of interest in game. Mobs like baby zombies and other small mobs would be completely obscured by the wheat, and it would be more difficult to identify normal sized mobs if they wander through the fields. This could be a fun change for social players to use for hiding things in the fields and making mazes and the like, or it could simply be an improvement to the usefulness of wheat (as well as a visual improvement). Other crops could potentially undergo this stage, and while they may not visually change, they could also have an increased harvest production, but it's really just wheat that needs a boost.
