After playing Minecraft for 11 years, to would love to see food and hunger be a little more challenging and realistic. Personally, I feel like acquiring food is way to easy, and you end up with stacks and stacks of food that will mostly go uneaten. I would love to see it revamped!
1( Food:
I think food should have a lifespan, just like in real life. Food, like meat for example, would spoil after an X amount of days, but cooking it would extend that life. This would make the player think about how they stash food/kill their livestock. Apples, bread, etc would all spoil after a while.
Maybe in winter biomes, food would last longer because cold helps reduce food being spoiled quickly... maybe introduce iceboxes, which give ice blocks a use!
2( Hunger:
I think your hunger bar should drop faster. In real life, you normally eat 3 meals per day, while in MC it can be one or two, depending on your activities. I suggest that the food bar drops quicker, so you need to eat more meals, but instead of damaging your health when starve, you would have much slower movement (e.x., potion of slowness). Certain types of food might extend the time before your hunger drops, like meats, to resemble you being full, where apples might not last as long.
