Amethyst has very few current uses, and is mostly for decoration. To give it more use as both functional and decorative, they could add Amethyst Windchimes.
Now I know there isn't technically any wind in Minecraft, but let's not ruin the immersiveness.
Amethyst Windchimes are decorative blocks that can be hung from ceilings similar to Lanterns, but cannot be placed on the ground. They make the Amethyst jingle noise at random intervals, as if the wind is blowing them. The noise occurs more the fewer blocks there are surrounding them, and it jingle more when it's raining or thunderstormy. Much like the Bells found in villages, the Windchimes can be right-clicked/used to manually jingle.
When they jingle, it can be detected by observers, or (because of the noise) sculk sensors. This would give it more use as a redstone component. It could also have potential use against the Warden and related sculk blocks and such.
If a Noteblock has a Windchime underneath it, then it makes a similar bell-like jingle noise (although that should be for all amethyst blocks), maybe.
