Basically my idea would be to make a frog variant based off the Poison Dart Frog that specifically occurs in Jungles, where if the new tadpoles grow up into frogs, the variant of the jungle would be a poisonous frog that could be a passive but hostile mob if you get too close to it. It could attack with its tongue and have a chance to poison each hit, I think it would add some mob diversity to the Jungle as well as ambiance with the ribbiting sounds. The Poisonous Frogs would also be brightly colored like Black and Yellow, or even Blue, or Blue and Yellow. It would give a new sense of danger to the Jungles because the Ocelots don't attack people as an always hostile mob. You could probably avoid angering the Poisonous Frogs by sneaking or something as well, utilizing some of the new stealth mechanics for the topside world as well.
