As Minecraft has progressed we have seen more biomes added and how they are laid out to make sense. As such I believe that there should be a difference between fresh water and saltwater. We have rivers that stretch far inland and yet we still have squids making their way there. We should have mobs separated to their own appropriate living spaces that meet their biological needs instead of simply having "magic water" where anything aquatic can live in even with their needs for separate salt contents and temperatures.
If there is a separation then we should be able to obtain fresh water and saltwater to buckets that may or may not rust if allowed to stay in a bucket for an extended period of time, similar to the oxidation of copper blocks. With the separation in mind, you could have specific variants of animals for biomes, ie. Polar Cod, Chorus Frog, Wood Frogs, etc...
We should also be able to smelt buckets of saltwater to obtain sea salt or have salt blocks that you can turn into salt. (possibly obtained from salt lake biomes or deep underneath the ocean) A salt lake desert biome or simply a biome close to the dead sea with high salinity content that has a color shift due to the salinity.
