I think the most reasonable place to place a giant mob, would be in the nether. like in the soul sand valley. where there are already plenty of fossils of huge creatures that could explain its existence.
The Giant would be rare and it should be sleeping. maybe it stays nourished through the souls of the soul sand. it would obviously be a boss. I think it should give mining fatigue and blindness to players in close range, plus if the player does not have soul speed they would find it challenging to kill the giant. There could even be a cyclopes variant of the giant which would explain most of the ancient fossils. the giant should tie into the lore of how soul sand came in to existence and such or other ways the community could get creative with.
Like the Lore goes that the nether was discovered twice so maybe the first time it was because giants used to roam the overworld they had fights with humans over when sky dimension was going to be added and bounced over to the nether because humans were hunting them down for their (awesome drops they could have.) Humans followed them into the nether. all there souls get trapped in the sand the Giants make. Lore is not important btw, just a thought.
giants should be resistant to fire and and potion effects. giants that move into the over world turn into a zombie variant. There drop should tie into why the humans eventually went over to the the end. Or something like that.
