If you are updating the End, update the strongholds too

If you are Updating the End Dimension, update the strongholds too with new mechanics.

    I think they should just get rid of the strongholds and make ender portals spawn in the new Deep Dark Cities

    To make strongholds more interesting they should add lots of new rooms with different puzzles with interesting loot such as a map to an end city.

    The stronghold should be infested with illagers who also desperately need to get to the end, to make the stronghold more challenging.
