In real life, calcite comes in plenty of strong colors!
I think this could be a great addition to the game. Something I find a lot of times is younger players often learn real-world things from Minecraft, and while things like Quartz usually surprise them as they thought it was just white due to the wonderful simplicity of the game, it would be hard to represent all of Quartz. However, I believe adding all sorts of Calcite colors is something that would not only be incredible for builds in the future, but would also educate the younger audience about variations of rocks in the real world!
Additionally, having colored calcite generate underground will add even more color to plain old regular caves without any of the new biomes.
This brings me to how it could be implemented. Having different color variations of calcite is a special task, as the other colored rocks is terracotta, which just generate in the badlands in different layers, whereas with calcite, you can have it be a material that generates semi frequently, and can simply appear in many colors!
And my very last point is: I do not believe calcite should be dyed like other colored blocks, but if you believe it should, what about this: Different colors could generate in different biomes?
