I would love to see seasons inside Minecraft and some new gameplay features with each season. I think seasons should last 91 in game days and every new world starts in Spring. I don't have an idea for a boss for each seasons but I have one for winter.
Spring: More baby animals will spawn, it will rain more often, more flowers will spawn than usual when hit with bonemeal, and crops grow faster. Very rarely the water level of river biomes can raise by 1-2 blocks after heavy rain but it would return to normal in an in game day or two.
Summer: Summer would be like normal Minecraft with the occasional heat wave that can slow crop growth.
Autumn: The leaves of may trees would change color and pumpkins grow at a faster rate.
Winter: Winter would make the leaves white and it would snow. Peaceful mobs would spawn at a lower rate, crops grow at a snail's pace, and there would be the occasional extreme blizzard. During an extreme blizzard torches without anything over it will go out, stone blocks (like stonebrick, cobblestone, etc) will become frosted and will become easier to break if not in a certain radius of a heat source like a torch, a new frost zombie will spawn and it will be more likely to have armor and weapons and can break down wooden doors, and only once per season a winter boss will spawn. This new winter boss could be some kind of giant like Ymir in norse mythology and when it strikes the ground it is equivalent to a TNT explosion.
