I personally think that a Dry/Arid (Desert-like) Cave Biome would fit really well with the 1.17/1.18 Caves & Cliffs Update. It would be a excellent opposite to its more Humid cousin (Lush Caves). Of course, we can add so much more. Like some Atmospheric depth into this biome. Certain, unqiue sounds chiming in, and new structures like a "Ancient Tomb", with epic loot inside, or something of the sort, could add a lot of immersion. I also think that there could be more stone types, like Limestone, Shale, or Chert comprizing most of the walls of the caverns, with sandstone being the main type. These new stone types could even be done more distinctly towards Granite, Diorite, and Andesite generation, too.
Futhermore, there could be Husks that primarily spawn in this Biome, along with, maybe a New Mob? Perhaps a Scorpion even, designed in the exact way spiders are. Like making them just as big as Spiders are in MC, and having them be hostile towards the player when they're in darkness and neutral when enough light is present. Or, (and this idea is a little out there but nevertheless) make it the reverse, where, the Scorpion will only attack the player if it sees sunlight, and then is neutralized when its pitch black!
Lastly, there can be a new food items (I can't really think of any new names) but adding a few new foodstuffs in the Cavern would give it more purpose. In conclusion, I strongly believe, Dry/Arid Caverns would be a very Awesome Addition!
