First thing I need to get out of the way, is that the main end island will stay the same, and the dragon will have the same mechanics, at least the first time, possibly different when you respawn it.
Mostly everyone agrees the End should be barren. But I have a way to make it unique while also staying barren. End caves. End caves are caves that can generate in the outer end islands, that contain a special type of wood. Cavecrawler/Glow Wood. This would be a very unique idea to have Wood in caves, It'd be a purplish type of wood with a small glow. This also contains a new endstone "grass" type. Glow lichen can also be found in these caves, and other things could also be found in these caves possibly as well. The second type of wood is on the surface. It's a golden yellowish type of wood, that also has gold endstone grass variant. The leaves on both of these trees are unique. The Glow Wood has smaller leaves, and can also grow sideways or fallen in the cave. These woods could have unique properties like how Nether wood doesn't burn, so that it's worth getting.
Both of these keep the ends unique color pallet while adding life to it as well.
I also think some structures could be added, but this is what I mainly want to see in the end update.
My ideas for both of these biome names:
cavecrawler hollows
golden lands
Ideas for unique wood properties:
Can float in the void for a small duration
Possibly could be placed in the air (could counter shulker levitation idk)
