You need the ability to cut a specific side of a mushroom with an axe. Cutting each side will drop a mushroom of the corresponding type.
When breaking a mushroom block, the number of mushrooms dropped depends on the number of mushroom sides on the block.
Change the mushroom's interior texture to a different shade (for variety). Keep the current flesh color for brown mushrooms, but change it for red mushrooms (to a lighter color, closer to sandstone).
Add the mushroom stem to your creative inventory. Also, make it a new type of wood (like the crimson stem and warped stem) by changing the mushroom stem's interior texture to log, but leaving the internal textures touching on all six sides (so you can get a reverse texture of cut wood consisting of six tree-cut textures).
(And add the same feature to other wood blocks, as it will give you creative ideas.)
Its cut version will look like the current mushroom block. And the rough one looks like the mushroom's stem is covered in bark. (You can even attach pale planks to this block, since mushrooms grow in dark forests, where pale wood is a variety of dark oak.)
You can also add mushroom bricks (similar to red nether bricks). They are crafted from two mushrooms of the corresponding color and two bricks.
For example, brown mushrooms can be used to craft brown bricks (the color of mud bricks, but with a brick texture). And red mushrooms can be used to craft light bricks (the color of sandstone or endstone, but with a brick texture).
