The current way the Salmons sizes are Codes they use the "minecraft:scale" component instead of the "minecraft:variation" component like the slimes do.
The problem is the scale component can't be tracked via a resource pack or query.
So the different sizes of Salmon can't be assigned unique texture or geos from each other unlike some can do with the Slime or Magmacube for example
