Okay, this is either going to be a really bad idea or a good one, but I just thought I'd suggest it.
I would like to suggest that Minecraft have a "simple" mode or version, and a "detailed" mode/version, because lately Minecraft has been focusing on overhauls that make the game much more diverse and complex but ruin the feel of the old game's clean simplicity.
The simple version would use the old rabbit model, and not have biome mob variants or leaf litter but still include minor bug fixes and technical changes that don't affect main gameplay, which is why this would be different from just downgrading versions.
The complex version would add all the new changes they've been making, like the new rabbit model and extra detailed foliage for each biome.
Please feel free to suggest better alternatives to splitting the game in comments, because this is probably too much work to implement or something.
