Death is too punishing in Minecraft. Although your items drop when you die, they only last for 5 minutes, and they may be destroyed by fire, lava, the void, cacti, explosions, etc.
You may lose all your hard-earned gear forever if a creeper happens to explode after you die, and then just stop playing because grinding the gear back is too boring.
Almost no game has a harsher punishment system than this, not even Souls-like games.
So here’s my suggestion:

Items dropped from a dead player will last 30 minutes

They can’t be destroyed by any source (including lava, cacti, etc.)

They will have a glowing effect so they’re easier to find

They will be teleported to y = 0 and float in the air if they fall into the void

Other players can still pick up your items, so this doesn’t affect PvP
Dying is still punishing, but you won’t lose all your progress just because you were unlucky.
