I just noticed (as of, at latest, 1.21.11 Pre-Release 1, perhaps earlier) that anti-aliasing was added to block textures. However, it only applies to the surfaces of individual blocks; the edges of blocks and transparent textures, the seams between adjacent blocks, entities, particles, and the clouds and sky, are not affected by AA and retain their "jaggies". IMO this inconsistency looks bad (and misses the point a little because it fails to account for the most noticeable jaggies on the silhouettes of objects) and i personally would like to turn it off (i am fond of my ugly little jaggies :P). However, despite all the new video settings, i noticed there wasn't one for anti-aliasing, and i see no reason for one not to be included!
