TL;DR : YAP.
What are phantoms? Undead flying creatures with no origin, the only item they drop being used to repair elytra. If the elytra are related to the phantoms and are also only found in the end, then wouldn’t the phantom originate from the end? Imagine a living Phantom, only found in the end it’s a more purplish hue. When it leaves the end it becomes a Phantom (much like a piglin).
Hold that thought, what is an Endermite? What if the mite (a pre larva stage) goes through a metamorphosis to become the living Phantom, we’ll call “Enderays”.
An endermite teleports away and despawns after 5 minutes, but where do they go? What if Endermites are teleporting under the end isles? Clinging to the the bottom and forming a cacoon, only shedding when it’s fully grown into a Enderay. Upon the shedding of the cacoon it could drop a husk, used with membrane to craft elyta.
Now for the lore.
Enderays are an invasive species, flying in droves through out the end, the only life that can survive their feast are the hard shelled shulkers, the evasive endermen, the repulsive chorus fruit, and the new life form, some type of lavender tree like plant that roots its way through the end stone, buried in the ground for warmth .
Among the end islands are small abandoned huts, built with the scattered recourses of the end and the occasional grass block (from the endermen) These huts would be infested with Endermites, also explaining why the endermen hate them so much,
