The focus is on expanding the dimension with a few new biomes, a lot of new structures, and mobs, while also increasing verticality and adding new unique gameplay mechanics. The End should stay similar, but should also be interesting and engaging to explore and potentially settle down.
Possibilities include new biomes with unique resources, more structures like abandoned cities, fortresses and dungeons, different types of Endermen and a new mini-boss, unique ores, more ender-based items, and mechanics like with gravity and space or a way to navigate the void.
Expand the End with rocky, jagged biomes, or those with giant crystals and to give it an alien feeling, but keeping the desolated look off the End and floating islands at different Y-levels, that could freely move around, to make exploration more engaging and utilize the elytra more effectively.
Include biomes that reverse or zero gravity, or where liquids flow upwards, to make the End distinct from the Overworld and Nether and introduce a new wood source, perhaps a larger version of the chorus plant, with unique or actual glowing colors for building.
