It is allways good to have multiple purposes for one mob.
A camel differs from horses because it can be rided by two players.
It's logical that hostile mobs need a husk camel since it would be weird if they would ride the same mounts as players.
Oho! A husk can be tamed, too. That's a good addition that makes it a great deel more interesting from the viewpoint of a player. But how could they differ from normal camels. They should be some how better so that they would be worth conquering.
My idea is that the husk makes way for a bigger desser themed update that introduces:
1) Thirsty bar. It is only active on deserts, you can keep it full by drinking water and if it goes to zero you will start losing HP.
2) we also have this second new bar: Horse food bar.
Both of the bars are not only good for the game (priority number one) but also very logical: deserts are hot. When horses are wild they eat grass but when they grow up you need to feed them (I think this could be expanded to pigs also once you have sadled them, but not to any nonridable animals. Or to the happy ghast or nautilus: they are so fantasy creatures that they can find their own food. They aren't as commonly used as horses, too). If horse's hunger bar goes to zero it doesn't die (that would be anoying) but you must stop riding it and give it some food.
So my idea is:
On deserts the thirsty bar replaces hunger bar. A husk Doesn't have a thirsty bar. That's why it's superior on desserts but not on other biomes.
