Alchemy could be much deeper if potions worked like enchantments. As the Turtle Master potion, many potions would now have side effects - for example, Strength might reduce Mining Speed, etc.
A new blocks like the Potion Separator and the Potion Combiner, could be found only in Witch Huts, the huts will be different structures with a chance of finding these blocks there placed or in the loot tables.
The Potion Combiner will work this way: Potions can be mixed. Effects merge but can neutralize each other: Harming II + Healing I = Harming I, Harming II + Healing II = Awkward Potion. Each potion can hold up to 3 effects, displayed like enchantments, adding more will turn the potion into suspicious one with unforeseen consequences.
The Potion Separator will work this way: you place one potion and this separate its effects by different bottles you also placed there, and you have to place exact amount of empty bottles as the potion effects
Potion color now depends on combined effects - each adds its RGB value, averaged to create a unique color based on the effects strength and count.
New effects:
- Paralysis - Stops the enemy immediately, but this shall not work on bosses.
- Shrinking - Decreases entity scale by 2+0.5*lvl
- Enlargement - Increases entity scale by 2+0.5*lvl
Potions can also exceed level II:

II→III with Netherite Scrap

III→IV with Nether Star Dust

IV→V with Chorus Fruit or other endgame items
This system would make potion brewing strategic, creative, and finally worth mastering.
