I think that a new mountain range biome would be quite a cool addition to minecraft. It could be generated using voronoi (worley) noise with perlin noise based domain warping, and would give players an incentive to build paths or tunnels through them for transport, which would encourage the to spend time building cool hubs on either end. It would also work well with the new Vibrant Visuals shaders at sunset, especially if the sky tint was turned to a dark blue to signify altitude. You could have a new village variant, Mountain Villages, where the houses have tall roofs like the snowy village and the pathways are thin boardwalks and stairways. Small lake structures could spawn in-between some peaks, with a fishing hut serving a similar role to the igloo. If possible, biomes on one side of mountain ranges (or inside / outside if in a circle) would have a higher rainfall / humidity level, and biomes on the other side would be desert like - as if clouds were being trapped by the rridgeline. For instance, you could have savanna on one side and jungle on the other.
There could also be a new mob spawning in-between the peaks: the eagle. The eagle, once tamed, would act like a parrot, sitting on the owners shoulder - but if given raw meat such as chicken, it would act like an allay for mobs, hunting for the corresponding mob and bringing it back. A tamed eagle would bring back live prey, while a wild eagle would bring back the drops. It's catch could be displayed between its claws.
