I propose adding new mobs to create more immersive and dangerous ecosystems. The Elephant would be a neutral herd animal in the Savanna that drops meat and can knock down small trees when charged. The Deer would be a prey animal in Forests and Taigas that drops meat and leather and flees from threats. To counter these, Lions and Tigers could be hostile apex predators in the Savanna and Jungle respectively, which hunt prey mobs and drop meat plus a rare trophy. Finally, the Crocodile would be an ambush predator in Rivers and Swamps, attacking anything that enters the water and dropping meat and scutes. This set of additions would make exploration more exciting and make each biome feel far more unique and alive.
