Instead of using nether wart for potions you could use leaves, different types of leaves give different effects like acacia giving fire resistance because of the hot climate it's found in or spruce giving jump boost because of it's large version and it's use in building, tea wouldn't last as long as regular potions and you can add sugar to increase the strength of the tea and milk to increase the duration
