I personally think that the Mushroom Islands, while awesome, could be even better. Some suggestions would be adding a few mushrooms types, perhaps based on real life examples, like those mushrooms that grow in groups and can be plucked like berries. Or more fantastic examples like glowing mushrooms that provide light, like torches.
Perhaps give a reason to actively seek these islands out, like an exclusive, rare armour trim or disc. Have a type of trail ruins that only generate on these islands, that have exclusive loot tables (mostly consisting of mushrooms). It doesn't have to be too crazy, but good enough to become an incentive to go.
Another suggestion is to add some other mobs to the islands, like cluckshrooms and oinkshrooms! They would function similar to mooshrooms in that they have rare brown variants and can be sheared to turn them into normal mobs! Cluckshrooms can lay special eggs that have a chance to hatch into baby Cluckshrooms, like other chicken egg varieties. This makes a really easy renewable source of mushrooms!
Oinkshrooms can be saddled like other pigs, and move slightly faster on Mycelium! Brown Oinkshrooms can be even faster! They have a chance to drop garnished steak when killed with fire, which restores a lot of hunger points and gives saturation.
