In Minecraft there's already a lot of food, but most of the the time players only end up consuming the few that give more saturation and food points and the other options become overshadowed.
One suggestion is giving an incentive to nourish of other variants by rewarding the player if they eat a balanced diet, dividing the food into simple groups like: fruit and vegetables, animal derivated and protein, and cereals (Example). A player that eats from all the groups could gain extra food points slots, increased saturation or positive effects, they won't be punished if they don't eat the groups, but will not receive said goods.
In this manner, food and other related items can be added to the game without concern of being unused or the playerbase being bothered since the current way of eating wouldn't be affected, maybe even adding more recipes to existing ingredients like wheat, cocoa beans or berries.
