For many years, receiving damage in Minecraft resulted in a consistent tilt in the same direction. Apparently this behavior was bugged, but after being in the game for decades, it was the expected reaction to being hit. Eventually this was changed so that the camera tilts in the direction of the damage. This change is fine on itself, but has some problems when you consider the fact that it's forced. While the historical tilt had minimal impact on aiming, due to tilting sideways, the new tilt can be forwards and backwards, often physically moving your crosshair off of what you're aiming at. It is also jarring for people who were loyal to the game and played for many years, the game now behaves very differently than they'd expect. You can disable/lower the amount that the screen tilts, but this does not fix the issue. Now, you are missing necessary visual feedback that indicates you've been hurt. It would be an incredibly simple fix to add an option to enable the old damage tilt in accessibility settings. I personally have drastically reduced my playtime in the years since the new damage tilt has been introduced. I would like to be able to play the game again without suffering from an obnoxious, useless change to one of it's core mechanics.
