I completely understand how complicated it would be to make an update for the End dimension, mainly because it has to be original and not just repeat the thousands of mods that already exist related to this (being inspired by someone is also good).
Getting to the point, my proposal is to bring archaeology to the End dimension.
1. Why?
The End has never really been the actual end of the game. Minecraft is a relatively infinite game, and players can continue playing even after reaching the End. So, what if the name “End” doesn’t mean it’s the end of the game, but rather that the player has arrived after everything already happened? Post-apocalyptic, maybe?
2. What would there be?
It wouldn’t just be an empty plain with chorus fruits, but also signs of ancient terrain, ruins of structures, places where there might have been vegetation (but now there’s none), and most importantly: fossils. Both plant fossils (as extractable items) and fossils of ancient creatures (directly as skeletons). Maybe they could have some practical use, like unlocking a new mob perhaps. There could also be new plants with some utility or decorative. A new tool, perhaps? That last one would be optional, really.
3. Extra ideas
It would also be great to take advantage of the End's generation, since it’s made up of floating islands, to create clever or unique features. Also, adding a new hostile mob to the dimension besides endermans, shulkers, and the Ender Dragon would help give the End a better atmosphere.
