villagers are vegan

Why do villagers have a butcher job if they're vegan, Who would they be selling the product too?

    To supply the Leatherworker, I guess? But you're right; it's weird that they have these jobs but don't eat meat. The Wandering Trader drinks milk, so they're not obligate herbivores as a species.
