Happy Ghast and Ancient tree

    You have to actively go out of your way to obtain a Happy Ghast, and the Creaking (assuming that's what you meant by "Ancient Tree Man") only spawns in a specific biome that's pretty easy to avoid. These aren't features that massively change the way the game is played, and it would be pointless to remove them for the sake of simplicity.

    In addition, Java Edition has the option to install older versions, so if you don't enjoy the updates you could always download an older version and make a server on there.

    I think the Happy Ghast opens up vertical space in new and interesting ways, but if I'm understanding your general vibe/concern, I will agree that too many mobs keep getting added. Mojang needs to slow down on that. The world risks moving from rich/alive to busy/crowded, and that's not very Minecrafty.

    Disagree strongly, but do see your point.

    Instead, have a toggle that turns mobs on and off, similar to phantoms. "Enable creaking spawning" and "Enable happy ghast spawning" and so on. 

    If it's that bad though, why not just play older updates? 

    I like having more mobs. I like the atmosphere. I love these drops. But I do see the appeal of having a quieter 'dead' Minecraft. The feel of loneliness has it's draw. 

    But if given the choice, I love the mobs. Hands down would choose them. Even the phantom.
