There should not be many more than five cave biomes. HOWEVER, what if each cave can only spawn four cave-specific mob types, and those mobs are chosen from a selection of different cave-specific mobs that could spawn in that type of cave? Same deal with cave plants. This way you get the feel of a different biome each time, even though it isn't.  In addition, this mirrors real life, where caves each evolve their own very separate ecosystems (as they are cut off from each other)

That or there could be several variants of the lush cave biome, each with its own plants and animals (such as cave-fish, cave birds, bats, different axolotls, etc.) Where the various biomes collide would create variants of already existing biomes (ie. lush dripstone caves, extra lunch caves, [two different lush caves colliding] sparse dripstone caves, etc.)

I REALLY like the idea of ice caves.

Finally, maybe there could be a "lush? skulk caves" biome where the new sculk blocks can have new variants, if that works with Minecraft lore.
