The devs are on record saying they wish for the End to be "desolate". As the most mysterious dimension, I think there is plenty of room to maintain this conceit and still have a more interesting dimension. It should be weird and alien, otherworldly, while also being hardscrabble and difficult to survive without the necessary preparations. My takeaway from the devs seems to be that they want it to simply be "empty". This suggestion isn't about any particular addition, rather a plea to reconsider the very idea of what the End "is".
The middle ground here is simply adding a handful of earth type blocks like sand, dirt or stone, and some basic flora. The Overworld and Nether both have options for grass. This can open up some possibility for complimentary colors like green and yellow. Just take a look at the End area in Minecraft: Dungeons. Its incredible, exactly what we're aiming for. No new foods, ores, or even mobs, just a lonely howling landscape of strangeness. A place worthy of being ruled over by Jean.
The reason for this? Simply making the End more interesting to look at. Currently we are flying tens of thousands of blocks for loot and immediately flying back home, passing endless empty islands populated by Endermen just milling around. No wonder they want to go to the other dimensions and take blocks!
