Recently a minecraft developer felix xialfian posted on twitter a what if candles could be made into scented candles by being crafted with flowers.
Some have suggested that they could be used to selectively choose which hostile mobs can spawn in that area as opposed to torches which prevent all hostile mobs from spawning.
I believe this would be a great opportunity to introduce some new flowers/plants to provide specific scents.
For example:
To scare away skeletons, strays and wither skellys you could craft dogwood with a candle to create a dog scented candle, perhaps though this could also make nearby llamas hostile seeing as they aren’t really a fan of wolves and hostile wolves calm down? Dogwood could grow in flower forests.
Cattails, found growing in clusters in swamps this would create a scent of cat candle. Scaring away both creepers and phantoms.
Foxtails, these could be found in plains biomes, they could have the scent of the fox when applied to a candle and scare away rabbits from your crops but make polar bears hostile.
My final idea is cotton, this could be found in dark oak forests and be used to create scent of the llama, this would scare away wolves but maybe attract llamas, ooh, imagine if you could set paths for mobs using candles?
This is just a rough idea of what could be,
