These giant holes should be 10-50 blocks deep, and 25-125 blocks wide and long.

  They should be rare too. Plants and grass and water fill the craters.

  they could even be massive and very deep, maybe even have special shocked stone variants and more ores, like iron

  I was thinking of a very similar idea. They could be structures rarer than ruined portals (around 0.015% probability of appearing in a new chunk), were iron blocks, gold blocks, coarse dirt, cobblestone, deepslate, turf, and iron ores appear. Maybe there could also be redstone ores. They would be craters.

  You are right, but also dungeons and mineshafts should spawn.
