The addition of large Iron and Copper ore veins in the latest snapshot is looking to be a great change. They're great ways to incentivize players to engage with the mining element of the game. Plus, if you're not a super technical player and aren't interested in digging into the game's mechanics to learn how to grind mobs efficiently, these veins give you a different option for building with Iron and Copper in large quantities.
I think the idea could be taken further by adding Redstone Veins below y=0 and Nether Quartz Veins in the Nether.
I have these two in mind specifically because if you want to use these materials, you'll likely need them en masse. If you want to build a Greek-inspired build, you're going to be picking the Nether dry or you'll be sitting in front of a Piglin for a while trying to barter enough quartz. And a large vein of Redstone could set you up with enough dust to last you through any mechanical project in your base without having to sit in front of a Witch Farm for hours.
Of course, I don't think this should be extended to Gold, Diamonds, or Emeralds since that would unbalance many Vanilla economies.
Discovering and extracting these large ore veins are an engaging way of collecting copper and iron, and are a much more active alternative to mob farming. The demand for Redstone and Quartz is high enough to justify giving them the same treatment.
