villager teacher

trades out a wide array of guides (signed books) about survival ("basics", "fighting this boss", "about a biome", "about tools", "how to achieve this and that"... various Redstone or survival (mob farms) builds (but not ones abusing villagers). Maybe a type of book could include a short summary of an entire update, 1 for each or of what the player might've missed in them.

There are many things I've learnt very late like that growing crops in rows makes them grow twice as fast, or lightning + mooshrooms, or suspicious stews, and I still don't use mob farms or redstone much. I think information being traded would be appealing.

the main issue I see is that the selection would be too wide so it's more useful to those who want to learn random stuff, instead of looking for a specific redstone guide
