There is a lack of colors for maps, including for its intended purpose of mapping your world. Every block of water, grass, or leaves is the same color. The biome and types don't affect it. There should be more colors for biome variability.
1, Water, especially the 5 types of ocean (warm, lukewarm, normal, cold, and frozen) should be a different for each group of biomes. The same should be true for grasses. Badlands (brown) grass and tundra (slightly aqua) grass don't look the same in game at all, but on maps they are represented by the same color.
2, Leaves need a bit of variety as well. Spruce and birch leaves don't change in different biomes, so they should simply be split from the main leaves color. But acacia, oak, and dark oak leaves do change color per biome, so new map colors should be made to show that
Third, unrelated to biome colors, there aren't enough map spaces. 32 thousand isn't enough for larger projects, especially on multiplayer servers. I think it should be raised
Edit: some other things to add
1. Some gradient colors for biomes so the change doesn't look so bad on a map
2. A command that would update all nearby maps (whether in an item frame or in your inventory), to make updating easier

Searching around the minecraft suggestions subreddit, I found that it isn't just biomes that need changing. Many blocks have a color very different to themselves on maps. I don't have enough space to list them, but when you look at the blocks, it becomes obvious
