The iconic chalk cliffs surely deserve a place in Minecraft, right? The chalk cliffs could generate as a biome near oceans, with a hill leading to the edge. Topped with grassy chalk to help grass bend in, the cliffs could be anywhere between 20 and 30 blocks tall, with chalk ledges dotted around the face of these rocky heights, where a new mob, the seagull would live. They would be a nuisance, and would pick up food items you drop when you die, along with valuable loot. You could also see them floating on the water with a fish in their mouth. Their ability to pick things up would be similar to foxes, the seagulls could pick up any item, but they prefer food and drop the other item to swap. But that's not it. Chalk from these cliffs would drop chalk sticks when mined with any non-silk touch pickaxe, the chalk prices looking a bit like amethyst shards. You could dye them and use them on signs to make pastel colours and craft 2×2 of any colour in a crafting grid to get that colour block of chalk. I think this would be really good for anyone, as there's new mobs, blocks, items and a biome.
