The healthbar needs to be changed from "hearts" to a "rectangular healthbar" as seen from Stardew Valley. I reference Stardew Valley because its healthbar allows enemies to have different variable attack damage instead of 2 to 3 enemies in the current Minecraft having the same attack damage, being limited by Minecraft's current healthbar. And that makes it boring and easy to play, and holds back innovation in the type of equipments needed to defeat enemies
Changing the healthbar will open up ideas of each enemy being in different difficulty tiers, as enemies will have different levels of attack damage, allow food items to regenerate players health at different speeds, allow players to craft stronger armour for less attack damage, and also streamline the difficulty of each game and not make Hardcore mode difficult.
One of the ways the healthbar can be changed can be like this. A healthbar with 150 points for example.

Above would be the healtbar.
The different types of armour cuts down on the different amount of damage taken from enemies. Enemies will have unique ranges of attack damage without all of them habing the same attack damage. The food consumed regenerate a specific amount of health.
Now what will happen to the hungerbar? It changes the same as the healthbar and only takes damage from actions done by the player.
