I got a lot of inspiration from a youtube video, which I give wattles full credit for this idea. I'm just adding a bit more to it which I think could work nicely.
Copper mining helmet, crafted with copper ingots and a candle. Visually on the player its a weathered copper helmet with a candle holder bolted on the front.
When worn it lights up dark areas with an albiet dim light but enough to see a good ammount of blocks. On the hud over the hunger meter will appear an energy meter this displays how long the candle can go for and the more the candle melts the less light it gives off until its back to pitch black.
Take off the helmet and like a bundle use it on a candle, it can only take one at a time and you can't replace them once they're on so you'll have to replace them once the current candle runs out.
Reason its like this instead of the helmet losing durability is because its still a helmet and should be able to defend you still. That way the durability and defense is kept on the helmet side and how it lights up areas is its own thing and so that the unbreaking enchantent wouldn't get in the way and break the thing if the light was based on the helmets durability.
There could also be an enchantment book which makes it so no matter how much energy or life the candle has it will always shine at its full but still pretty dim brightness. No infinite candle though I'd see that as being overpowered but the candle always shining at maximum brightness how I see it is a fine compromise.
