For the 1.17 update, since caves are being updated, I think mineshafts and minecarts need love too.
Mineshafts could spawn with more rooms and structures. For instance, maybe a long vertical shift that extends down 40-60 blocks. Abandoned mining colonies or living quarters could generate where now deceased miners once lived.
Anytime mineshafts cross ravines or jut out into caves, support pillars and fence trestles could generate underneath them. Parts of mineshafts could also be caved in, bridges and walkways could be collapsed, and skeleton or zombie miners could spawn who drop emeralds, gold, or diamonds. Gold should generate more frequently around mineshafts.
Variations in the type of wood mineshafts are made up of could vary too. For instance, if mineshafts generate under spruce forests, the mineshaft wood should be spruce. If it generates in a desert, the wood should be oak.
Decayed rails could also generate, and mineshafts in mountains could be cool too.
As for minecarts, a news "train" system could be added that allowed chains to link minecarts. The furnace minecart could be upgraded as well to better allow it to work like an actual train.
A new pump cart could be added that would work like boats, allowing the player to drive a train of minecarts.
Rails could get an upgrade too. X or T intersections would be a great new Redstone component. Vertical rails would be great too, and it would make for a great way to create elevators.
